Fashions do affect even these transformations, sweeping away mass catering (no longer breakfast at 9 sharp) in favour of choice, with three restaurants, bars that are also tea rooms, a pub that sits in an eyrie looking down on the Boulevard, a refuge for parents (no children here, chess sets on the tables, cards behind the bar). Evolution again, not revolution. Evolution means the change is constant, thought through, not just through the hotel but also through the community, lived with, planned, not just endured for a wage. The building can be read as a history of this change.
